Color: deep, dark red.
Bouquet : intense , elegant, complex, mellow and very persistent, with a prevalence of underbrush and berry fruit, pepper, notes of chocolate, coffee, liquorice and vanilla, beautifully complementing each other.
Palate : complex, characterful, rich, dry and very persistent, with good presence of tannins that is balanced by impressive magnitude and structure.

Area of production : Camarato - Tenuta di “San Castrese”(“San Castrese” Estate), Sessa Aurunca.
Soil type: volcanic, rich in phosphorus and potassium.
Year of vineyards' planting : 1970
Vineyard Altitude : 150 metres above sea-level.
Harvest time: last ten days in October.
Vine density : 4500 vines a hectare
Training system : “Gouyot” system, with approximately six buds a plant.
Must –to- fruit ratio ( litres / hectare ) : around 3.500

This wine is exclusively produced only in the best vintages, picked in the homonymous vineyard, which is one of the oldest and most favorably located vineyards of “Villa Matilde”.
The bunches, hand-selected one by one, are gently crushed to obtain the must; it ferments , together with the dregs of pressed grapes, for 20 / 25 days, at a temperature of about 25° C.
Maturation:
after the malolactic fermentation, wine matures in “Allier” oak barriques for 12 months ( 1/ 3 new, 1 /3 of second passage, 1 / 3 of third passage ); then, there is the bottle-aging, that lasts another 12 / 18 months.
