COLOR: amber with golden reflections.
BOUQUET: intense , persistent, opens up with aromas of vanilla, apricots, very ripe fruit, cream and intense floral notes of roses and tuberose.
PALATE: excellent persistence of flavors, good acidity and medium residual sugar; superb structure, sensations of silk and velvet.

Soil type:
- LOCATION OF SESSA AURUNCA: volcanic, rich in phosphorus , potassium, and microelements.
- LOCATION OF CELLOLE: sandy, rich in silicates, phosphorus and potassium.
Year of vineyards' planting : various years, since 1980 to 1994.
Vineyard altitude : 80 / 150 metres above sea-level.
Harvest – time : the last ten days in October.
Vine density : 4500 vines a hectare.
Training system : “Gouyot” system, with approximately six / eight buds a plant.
Must – to- fruit ratio ( litres / hectare ) : around 2.000

Grapes are left on the vines to dry until early November, then they are picked and placed on racks to complete the natural drying process; in December, they are soft – pressed and slowly fermented.
MATURATION: sojourns 5 months in stainless-steel and bottle.
